These cookies have brewers yeast, flax, and oats- this is why they’re called “Lactation Cookies”. The great thing is that these ingredients are very good for everyone! I am in LOVE with them- I’ve adapted the recipe by Noel Trujillo. My changes are below. I really think the coconut oil, peanut butter, and pecans made a HUGE difference. These are not, I repeat, NOT diet cookies. But worth every calorie. I promise. =)
Oatmeal Chocolate Chip Lactation Cookies By Noel Trujillo Recipe – Food.com – 192346.
1/2 cup butter
1/2 cup coconut oil
1 cup (or less) sugar
1 cup firmly packed brown sugar
4 tablespoons water
2 (heaping) tablespoons flax seed meal
2 eggs
1 teaspoon vanilla
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
3 cups oats
1 cup chocolate chips
2 -4 (heaping) tablespoons brewer’s yeast
1/2 cup peanut butter
1 cup nuts (I used pecans)
Directions: 1 Preheat oven to 350°. 2 Mix the flaxseed meal and water and let sit for 3-5 minutes. 3 Beat butter, sugar, and brown sugar well. 4 Add eggs and mix well. 5 Add flaxseed mix and vanilla, beat well. 6 Sift together flour, brewers yeast, baking soda, and salt. 7 Add dry ingredients to butter mix. 8 Stir in oats and chips. 9 Scoop onto baking sheet. 10 Bake for 12 minutes. 11 Let set for a couple minutes then remove from tray.

Great! Glad to hear that someone else is about to get addicted! I swear I eat like 6 a day- but they’re my only splurge most days and I feel pretty good about that.=)
